While I have eaten poached eggs before in restaurants, it has never been my favourite style of eggs. I am one of those people that get disgusted at the least bit of wobbly, uncooked (slimy!) egg white. Big ICK! In fact, raw egg whites actually contain a substance called avidin which interferes with absorption of the B Vitamin, biotin, and contains trypsin inhibitors which interfere with protein digestion. So the whites are best eaten cooked. We never ate poached eggs on the farm growing up and, since I learned to cook from my mom (thanks, mom!), poached style was one thing I never learned.
